Snow day

      This is our first snow day of 2016. Happily its a Saturday and I got to spend the day making a slow cook beef stew, skillet corn bread and mini monkey bread.  The only person who has to venture to work today is Alex. That's what compelled me to make dinner early. He's heading out in two hours to work at a nearby supermarket where he works in the deli department. Alex has always enjoyed working in food service and his work has many layers. He cuts cold cuts to order, prepares and cooks the fresh roast beef and turkey and is responsible for the sanitation of the both the front counter area and in the back kitchen.  Its a position of responsibility and one that requires him to interact with hundreds of people each day.  Not bad for someone who used to be unable to talk to anyone outside the family. 
    What I've leaned about being the mom of someone with AgCC is of all the words that could possibly define their situation at the top of that list should be the words 'amazing and incredible'. 
​    Time for dinner. Have a wonderful evening.
